Glazed Lemon Brownies

Since beginning quarantining, I have tried to focus on sharpening skills that have been put on the back burner due to the busy lifestyle that I typically keep.  I personally enjoy treats, and in particular lemon based desserts.

I decided to tackle lemon brownies (again).  They're a good spring time dessert and pretty easy to make and bake in 25 mins. 

Kitchen utensils you will need:

9 x 9 baking pan

Lemon Zester

Whisk 

Manual lemon juicer 
(I like to squeeze my lemons, use store bought lemon juice at your discretion. 

Measuring cups

Tablespoon | Teaspoon

Two bowls

Baking ingredients for batter:                                                         Baking ingredients for glaze:

1 Cup - Flour                                                                                   1 Cup - Powdered Sugar
1 Cup - Granulated Sugar                                                                1 1/2 Tbsp - Fresh Lemon Juice
1/2 Tsp - Salt                                                                                    2 Tsp - Salt Lemon Zest
1/2 Cup - Butter
2 Large Eggs                                                                                   Mixing these ingredients is quick &
2 Tbsp - Freshly Squeezed Lemon Juice                                        easy.  This takes 1 minute to do!
1 Tbsp - Fresh Lemon Zest
                                                                                                         Bake at 350 for 30 minutes. 

To begin, mix the flour, sugar, and salt together.
Slowly pour in the butter and mix with previous ingredients.
Finally add both eggs, lemon juice and lemon zest.
                                                                                                                                                                   

Tip:  My suggestion is to zest and juice your lemons prior to mixing your ingredients.  It makes the process quicker.  Before glazing your brownies, make sure you let the brownies cool to prevent the glaze from melting down the side of the brownies (lesson learned).

Once chilled: cut, taste and enjoy!!
